Gin, In Detail

Four connected record types tell the complete story of a batch โ€” from botanical delivery through to duty payable.

Botanical Traceability
โ†’
Batch Log
โ†’
Botanical Trace Log
โ†’
Duty Form
FormPurposeKey Fields
Batch LogThe core production record โ€” maceration, distillation, ABV, yield, and the botanical recipe used.Maceration/distillation start & end, ABV (min. 37.5%), yield, losses, botanicals list, pure alcohol (calculated)
Botanical TraceabilityRecords each delivery of a botanical ingredient from a supplier โ€” the foundation of farm-to-bottle traceability.Supplier, supplier lot number, quantity received/used, running remaining stock (calculated)
Botanical Trace LogTies a specific production batch to all the botanical deliveries used in it, as a line-item list.Linked batch, botanical, quantity, unit, certificate reference
Duty FormCalculates excise duty payable on a batch โ€” reproducible for audit, years later.Volume, ABV, duty rate per LPA, pure alcohol litres, duty payable (calculated)
Worked Example

GINBATCH-2026-0031 โ€” 20kg of juniper berries arrives from a supplier, logged and locked as a Botanical Traceability record. The batch macerates over two days with juniper, coriander, angelica root, and citrus peel, then distills at 81.4% ABV beginning-of-batch with a yield of 450L. Pure Alcohol is calculated automatically: 450 ร— 81.4 รท 100 = 366.300L. Once approved, the Duty Form calculates duty payable at ยฃ28.74/LPA: 366.300 ร— 28.74 = ยฃ10,528.90 โ€” a figure that stays reproducible for HMRC review years later.

Whisky, In Detail

The longest pipeline in AlchoGin โ€” six connected record types following grain all the way to a maturing cask.

Mash Log

Fermentation
โ†’
Distillation
โ†’
Cask Filling
โ†’
Warehouse Movement

+ Angels' Share Log โ€” periodic evaporation readings, ongoing throughout maturation

FormPurposeKey Fields
Mash LogWhere a batch begins โ€” grain mixed with hot water to extract fermentable sugar.Batch ID, mash temperature & pH, volume, grain items (with supplier/lot)
Fermentation LogYeast converts sugar to alcohol; gravity readings show conversion.Start/end gravity, duration (calculated), yeast & nutrient inputs, temperature readings
Distillation LogWash is distilled and separated into cuts โ€” foreshots, heads, hearts, feints.Wash volume, per-cut volume & ABV, total yield (with a built-in sanity check against wash volume)
Cask FillingNew-make spirit goes into a cask to begin maturation.Cask ID, cask type, warehouse location, fill volume & ABV (37.5โ€“95%)
Warehouse MovementTracks a cask's physical movement between storage locations.From/to location, reason, moved by, optional GPS location capture
Angels' Share LogPeriodic evaporation-loss measurement for a maturing cask.Measurement date (one per cask per day), volume loss, ABV change
Worked Example

WSKBATCH-2026-0012 โ€” 1,200kg malted barley + 300kg peated malt mashed at 65ยฐC (1,500kg total grain). Fermented 48 hours, gravity 1.080 โ†’ 1.005. Distilled from a 4,800L wash into cuts โ€” Foreshots 20L, Heads 60L, Hearts 800L @ 68% ABV, Feints 40L โ€” for a total yield of 920L (comfortably under the 4,800L wash volume). The 800L of hearts fills cask CASK-2026-0044 at 68% ABV โ€” Pure Alcohol: 800 ร— 68 รท 100 = 544.000L. Six months later the cask moves to long-term racking; a year on, an Angels' Share reading shows 18L lost to evaporation (~2%) and ABV easing from 68% to 66.5%.

Rum, In Detail

A three-stage pipeline โ€” raw material intake, fermentation, and barrel ageing โ€” all threaded together by a shared intake identifier.

Molasses Intake
โ†’
Fermentation Log
โ†’
Barrel Ageing Log
FormPurposeKey Fields
Molasses IntakeRum's equivalent of a goods-receipt โ€” a specific delivery of molasses from a supplier.Supplier, Brix (sugar content), quantity, delivery date
Fermentation LogConverts the sugars in the molasses into alcohol via yeast fermentation.Linked intake, yeast type, temperature, duration, gravity readings
Barrel Ageing LogCask filling and warehouse location for rum maturation.Linked intake, cask type, warehouse location, fill volume & ABV (min. 37.5%)
Worked Example

RUM-INTAKE-2026-0009 โ€” 2,000kg of molasses arrives from Caribbean Sugar Traders at Brix 14.2. Fermentation batch RUM-BATCH-2026-0004 references that same intake: pitched with a dedicated rum yeast strain, fermented 72 hours at 28ยฐC, gravity dropping from 1.090 โ†’ 1.008, yielding 1,800L of fermented wash. After distillation, 180L of spirit at 65% ABV fills cask RUMCASK-2026-0021 โ€” also linked back to the same intake โ€” so a bottle sold years later can be traced to this exact molasses delivery.

Vodka, In Detail

A focused two-stage pipeline reflecting what distinguishes vodka: repeated distillation to a high, neutral strength, followed by filtration for clarity.

Distillation Log
โ†’
Filtration Log
FormPurposeKey Fields
Distillation LogCaptures the column configuration used, resulting strength, and yield of a distillation run.Column settings, ABV reading (min. 37.5%), volume, run start/end, pure alcohol (calculated)
Filtration LogRecords the carbon filtration pass and quality-control outcome.Linked batch, carbon filter batch, flow rate, clarity pass/fail, post-filtration ABV
Worked Example

VODKA-BATCH-2026-0007 โ€” a run through a 6-plate column at an 8:1 reflux ratio produces 600L at 96.0% ABV. Pure Alcohol is calculated automatically: 600 ร— 96.0 รท 100 = 576.000L. The linked filtration record VODKA-FILT-2026-0011 logs carbon filter batch CF-2026-018, a flow rate of 45 L/h, a post-filtration reading of 95.8% ABV, and a Clarity Passed: Yes โ€” the batch is now cleared to link to a shop product and go on sale.
